Egg ‘n’ Banana

So I have to let the cat out of the bag, or rather the recipe out of the book.  Lately, I’ve been inspired by “The Flavor Thesaurus” in guiding me towards new flavor combinations.  That is where I’ve found the idea to combine Egg and Banana as an omelette.  Thanks Niki Segnit.


One ripe Banana
One AA Large Egg
Butter or Oil (for coating pan)

Mash 1/2 banana in a bowl and scramble egg in with it.  When small amount of butter has melted in pan over medium high heat, pour in egg mixture.  Cook however you please, but remember to take egg off the heat before it looks finished cooking, as it will keep cooking off the heat. Serve hot and top with other 1/2 banana.
