Russian Chicken Cutlets

My boyfriend, Joshua, has finesse!  A recently found skill; Josh now cooks and he’s dang good at it.  For a summer solstice dinner, we comforted our bellies with these Russian Chicken Cutlets found on copykat recipes.

2 pounds ground chicken breast
1/2 cup chopped onion
1/2 cup shredded zucchini
1/2 cup seasoned bread crumbs
1 egg
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons of cooking oil

You may find the recipe on the link above however, I do suggest placing one piece of  white cheddar cheese atop the patty.  This makes for rich and rustic taste that will hit the right spot.  Until I find a more complete green- serve with arugula and:
