Tastes like…

Fajitas!

This concoction is a healthy and varied alternative to the sinfully rich and salty fajitas.

Wanna try?

Ingredients: Experiment with measurements and toppings!

Chicken (I used rotisserie chicken)
Quinoa
Milk
Chicken Seasoning
Hot Sauce (I used Crystal Louisiana Hot Sauce)
Onions
Red Peppers
Green Peppers

Prepare quinoa (I cook a bunch at a time and then use it throughout the week).  Saute onions, red peppers and green peppers until browned yet still crisp.  Set aside.  Combine quinoa, milk, chicken seasoning, hot sauce and chicken and simmer until most liquid has evaporated. Toss quinoa mixture with the onions, red peppers and green peppers.

Savor!
