Sweet Thai Pork Potato Pie
This is yummy. It tastes so sinful yet packs some nutrition in it for you! I created the recipe myself and it turns out to be sort of a “meatloaf” when it is finished.
Ingredients
1 sweet potato
1 lb. ground pork
1/2 c. diced onions
1 red bell pepper
3/4 c. milk
1 egg
~3 T. peanut sauce (use recipe below or make your own)
Peanut Sauce (Tyler Florence)
1 cup smooth peanut butter
1/4 cup low-sodium soy sauce
2 teaspoons red chili paste, such as sambal
2 tablespoons dark brown sugar
2 limes, juiced
1/2 cup hot water
1/4 cup chopped peanuts, for garnish
Combine the peanut butter, soy sauce, red chili paste, brown sugar, and lime juice in a food processor or blender. Puree to combine. While the motor is running, drizzle in the hot water to thin out the sauce, you may not need all of it.
Cut up sweet potato and red bell pepper and blend in a food processor until smooth. In a mixing bowl, combine potato pepper puree, ground pork, egg, onions, milk and peanut sauce. Pour into glass baking pan, smooth and bake in oven for ~1 hour at 425 degrees.
